Ingredients
Coleslaw:
- ½ head red cabbage sliced
- ½ head white cabbage sliced
- ½ red onion finely sliced
- 2 spring onions sliced (plus extra for garnish)
- 1 medium red pepper sliced
- 2 sprigs fresh mint
- 3 tbsp dill
- ⅓ cup walnuts roughly chopped
No mayo Vinegar Dressing:
- ⅓ cup apple cider vinegar
- 1 tbsp maple syrup or honey or as needed
- 1 tsp dijon mustard
- 3 tbsp olive oil
- ½ juice of lemon
- ½ tsp salt or more
- ½ tsp black pepper or more
Instructions
In a mixing bowl, combine the vegetables.
½ head red cabbage, ½ head white cabbage, ½ red onion, 2 spring onions, 1 medium red pepper
In a mason jar, combine the apple cider vinegar, maple syrup or honey, dijon mustard, olive oil, lemon juice, salt, and black pepper. Shake well to combine. Taste the dressing and adjust sweetness if desired by adding more maple syrup.
