Happy first Friday in June! Aren’t Fridays a little sweeter after a long weekend? I think so, too. This week flew by, and I’m not mad about it. We’ve been really busy with lots of rain, grocery store shopping, a doctor’s appointment, lunch dates, and a bed transition. Our Memorial Day weekend was even busier with a day dedicated to a birthday party and time to catch up with our friends and with another day dedicated to one last crawfish boil of the season. We also transitioned Charlotte’s old nursery into a big girl room. Whew. That makes me tired all over again. I’m sure everyone has an even busier weekend lined up, so let’stalk about what’s currentlygoing on. I even have a really simple and delicious recipe to share, too.

I’ve made some fun summer purchases over the last couple of weeks, and they’re too great not to share, (each under 10 dollars, too)! I’m loving my new Starbucks phone cover. When I first saw it on my friend Esther’s Instagram, I knew I had to snag one. For two dollars, I couldn’t pass this silly thing up. I also have two new favorite lip colors. I usually wear Chanel’s longwear lip color, but it’s a bit too bright for me right now. I wanted something simple but with a pop of color. I love this new Loreal Paris Infallible Two-Step Lip Color in Timeless Rose. I also ran out of my tried and true Maybelline Baby Lips color that I’ve worn forever, so I got this new one in Cherry Me. I like to layer the two. And then there’s this little notepad I picked up from the old faithfulTarget Dollar Spot. My pens are old, but they’re my favorite for lists and planners.

It was a little bittersweet, but the excitement on her face when she woke up and saw her new room made any tinge of sadness go away. I mentioned this on Instagram this week, but we switched out all of her nursery furniture into our old guest room, and we’ll be transforming that into baby boy’s nursery. Once the furniture was moved out of her room, we moved her new furniture in. The hubs worked really hard on her dresser, and I didn’t get a snap of the finished product just yet because her room isn’t “done.” But we did get majority of the room up and running for now. I still need to get wall hangings and frames moved and things in order, but it’s definitely coming along.

She is such a silly goose. Some of y’all have asked what the transition has been like for her, and she did so great on her first night in there. I think it might have something to do with the fact that she was absolutely exhausted though after a full afternoon of swimming. One tip I would have for a transition into a big girl’s room would be get your toddler/pre-schooler all tuckered out from a full day of activities making them so tired that they can’t help but fall asleep. She still sleeps with her toddler pillow, too, so familiarity also helps. I will say that I was tricked into thinking that she was going to start napping again, because she napped two days in a row once we made the switch. It was a cruel joke. Yesterday, she didn’t nap, and leaving her in her room unattended is still a bad idea. I shared on Snapchat the disaster she made in her room, pulling everything out of her drawers and shelves. And the nap saga continues. We’re figuring it out one day at a time. You know, motherhood style.

It’s been a fun adventure so far, but we still have so much to do. I’m up for the challenge though!

FOUR.

You all seem to love my recipes for some reason, and I couldn’t be happier. When I was going through my camera, I saw that I hadn’t shared this ridiculously easy breakfast recipe. It’s a classic Tex-Mex dish that I grew up with, and it’s so simple, I’m almost embarrassed to share.

Have you ever heard of Migas? There are many variations of it, but the simple version is my favorite. Add some salsa or pico de gallo to the mix, and this is such a good breakfast.

INGREDIENTS

  • 6-8 corn tortillas
  • 2 tbps. olive oil
  • 6-7 eggs
  • dash of milk for eggs
  • salt & pepper
  • Mexican shredded cheese

DIRECTIONS

  1. Rip the corn tortillas to thumb-size shreds.
  2. In a large skillet, heat up the olive oil until hot. Add in the corn tortilla pieces and fry until crunchy but not burnt.
  3. Scramble your eggs with some milk and season with salt and pepper. Add into the skillet and cook until eggs are done.
  4. Sprinkle with cheese and enjoy!

See. So easy!

FIVE.

We are still binge-watching Game of Thrones. We watch on our Apple TV (similar to Amazon Fire TV) via the HBOGo app, and we just finished Season 5. Holy moly! This series is so easy to binge on because there are just too many stories going on. I think we’ll definitely be up to speed with Season 6 and can watch in real time by the end of this weekend. We are serious. Then we can go back to regular programming, or you know, I could read a book. What are you watching or reading right now?
